Caprese Chicken Recipe

My favorite salad is a Caprese salad of tomatoes, basil and mozzarella cheese. So why not use the tomatoes, basil, and mozzarella with chicken?

You can grill this dish, but my family agrees it’s juicier straight from the oven.

It goes perfect with the Caprese Pasta Salad that my friend Niky from The House on Silverado makes. Add some fruit parfaits for dessert and this an absolutely perfect summer meal.

Ingredients for Caprese Chicken

2/3 cup Italian salad dressing

4 boneless skinless chicken breast halves (6 oz. each)

2 Tbsp. canola oil

½ lb. fresh mozzarella cheese, cut into 4 slices

2 medium tomatoes, sliced

1 Tbsp. balsamic glaze

Torn fresh basil leaves

 

Directions for Caprese Chicken

Prep Time: 10 minutes + marinating (4-6 hours or overnight)

Bake: 450¡ for 20 minutes

Makes: 4 servings

Step 1 – Marinate Chicken

In a large resealable plastic bag, combine salad dressing and chicken. Seal bag and turn to coat. Refrigerate 4-6 hours or overnight.

Step 2 – Cook Chicken

Preheat oven to 450¡.

Drain chicken, discarding marinade.

In an ovenproof skilled, heat oil over medium-high heat. Brown chicken on both sides.

Transfer skillet to oven.

Bake 15-18 minutes or until a thermometer reads 165¡.

Step 4 – Add Cheese and Tomato

Top chicken with cheese and tomato.

Bake 3-5 minutes longer until cheese is melted.

Step 4 – Finish with Balsamic Glaze and Basil

Place chicken on platter or individual plates.

Drizzle with balsamic glaze. Top with fresh basil.
